Romaine Salad with Garlic Vinaigrette

This simple salad is basic but very delicious and always reminds me of my grandparents. During the day, my grandfather would go out into the garden to collect the vegetables for the meal. Back at the house, my grandmother would prepare this delicious salad dressing.

Serves 4

Directions

Combine the garlic, vinegar and mustard in a mixing bowl and stirring well with a fork. Let sit for at least 10 minutes to marinate.

Season the vinaigrette with salt and pepper and slowly drizzle in the olive oil.

Dress the romaine lettuce and sliced onion with the garlic vinaigrette and serve immediately.

 

Ingredients

1 clove garlic, peeled and minced (about 1 teaspoon)
1 tablespoon sherry vinegar
¼ teaspoon Dijon mustard
3 tablespoons olive oil
2 heads romaine hearts, trimmed and torn into bite size pieces
½ small onion, very thinly sliced
- fine sea salt and freshly ground pepper
